Give Me Five Monday Meme #38

Monday, October 20, 2008

The 'Give Me Five' Monday meme is designed to share fun information with each other in a simple short list! Here's how it works. Each week, I will put out a random topic from my list of topics and you share 5 answers of your choice on the given topic and link back here! You can add photos, links or stories or just a simple list of your own of 5 things that relate to the topic as it pertains to you and your life experiences. It doesn't have to be in any order of importance unless otherwise specified.

Give Me Five fave fall time foods with or with out recipes.

I do love food and the fall brings a whole new bountiful harvest and cool weather, driving us to pick out new recipes to prepare and enjoy. So here's mine:

1. Pumpkin bread. I grew up on this wonderful treat. I remember getting all excited about this time of year because my mom never baked in the summer time. This recipe is so simple and tried and true. Oh yeah, and it's great because there are NO EGGS! It's better for you and it just tastes yummy! Enjoy it:

Sift together:
2 1/2 cups of flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg or 1/2 tsp. pumpkin pie spice
2 cups sugar
Set aside.
In a large bowl, mix:
1 small can of pumpkin
1 cup of oil
Add dry ingredients in small portions and stir until no lumps. You can add 1/2 to 1 cup of chopped nuts (walnuts or pecans). Bake in a greased and floured 9 x 13 or bundt pan in a 350 degree oven for 45 min.

2. Chili. 'Nough said.

3. Fresh Apple Cake. This is another family favorite my mom used to make. I have the recipe and still haven't made on my own, but oh how I wish I would, it's fantastically yummy!

Sift together:
2 cups of flour
1 tsp baking soda
2 tsp cinnamon
1/2 tsp. salt
2 cups sugar
Set aside.
In a large bowl, mix:
2 eggs-beat well first
1 cup vegetable oil
1/2 cup milk
2 tsp vanilla
When smooth, add in the dry ingredients slowly. When no more dry parts are left, add:
3 cups chopped Johnathan apples. Small sized pieces cook up best.
Optional 1/2 to 1 cup chopped nuts.
Bake in a greased and floured 9 x 13 pan at 350 degrees for 60 minutes.

4. Oatmeal. I know you can eat oatmeal for breakfast at any time of the year, but I'm kinda like my mom when I don't prefer hot foods in the summer at all. Oatmeal makes me so happy. The maple and brown sugar kind is my fave!

5. Coffee and hot tea. Ok, these are more drinks than food, but again, I love this time of year with cooler weather because it's perfect for it! I can't stand to drink hot coffee or tea in the hot summer.

Hi, Becca,

I'm one of those love-coffee-all-the-time gals. I think it could be because our weather here in the Pacific Northwest can be cool a lot of the year.

Thanks for the prompt. :)

That pumpkin bread sounds so good I have copied the recipe and will give it a try, couldn't be simplier. Thankyou from New zealand. Actually the fresh apple cake sounded good too, but I didn't copy that recipe.
